Justin and Katie Meddis were trying to plan how they could have their careers, see each other and help make a difference. Justin is a chef and butcher, and Katie a pastry chef. They decided to combine forces and open a meat & sweet shop. Thus, the concept of Rose’s was born.
The idea grew and grew until they decided to move to Durham. Upon arrival, they hit the ground running. Visiting farms, doing pop-up dinners, farmers market demos, butchery classes, testing recipes, all the while researching local meat and other ingredients.
Justin and Katie are passionate about working with and selling high quality, local, pasture raised meats and using local, sustainable ingredients.
We work with local farms to source the freshest meat and butcher it in-house. All animals are pasture-raised.
We prepare fresh pastries daily. Our selection varies from day to day, but our offerings include fresh fruit galettes, buttermilk panna cotta with fresh fruit jams, bittersweet chocolate pots de crème, meringues, macarons, homemade caramels, bread puddings and cookies.

We offer three types of ham for the holiday season. Our hams come pre-cooked and vacuum packaged. You can either slow roast them in the oven to heat them or heat them directly in the bag. The Hampshire ham will take a good glaze well while the Suffolk ham needs no condiment except some good mustard. We ask for a 20 deposit on our hams as they are made to order!
This is our version of a smoked holiday Ham. Its recipe is derived from an old English recipe that uses cider and molasses as the brine for the pork. It is then smoked to give it a good flavor and a golden color.
It is made from the bone-in hock end of the leg. Great for roasting and endless leftover meals, this will make an excellent presentation at your holiday table. Give us your target weight and we will do our best to get close to it. Sizes available are between 9 and 15 pounds. Cost of this ham is $11.99/#
These hams take the word “Ham” to a new level! It is first dry-cured with salt afterwards it is soaked in a marinade of black beer, molasses and spices. The Suffolk ham will definitely make your holiday table a unique and memorable one! This ham should not be re-cooked, just reheated in the vacuum sealed bag it comes in
The Suffolk ham is available as a whole (9#)or half size(5#). The cost is $15.99/#
Traditional English-Style boneless ham, Cured with sea salt and dark cane sugar. This is a milder version of the Suffolk Ham, great for pairing with other meats at the table or as alternative to a red meat roast. Excellent for leftover sandwiches. They are available as whole or half hams and are $13.99/#
We have many different options for you if a roast is what you would like on your holiday table. Please place your order well in advance to ensure availability. If you have another cut of meat in mind, don’t hesitate to ask!
If you are looking for and Italian twist to your holiday party we are also offering rolled porchetta’s. Porchetta is an Italian dish that is the pork belly rolled around the pork loin. It is seasoned on the inside with fennel, garlic, oregano, chili flake and pork liver. The Porchetta can be slow roasted to achieve a moist interior and then put in a hot over to crisp the skin. Porchetta’s can be ordered from 5 to fifteen pounds and are $14.99/#
Pork Rib Roast:
The pork rib roast/rack of pork is the pork equivalent of a standing beef rib roast or a rack of lamb. This cut makes a show-stopping centerpiece for an elegant dinner. Rib roasts are available by weight from 2 to 10 pounds. Their cost per pound is $10.99. Frenched roasts are $11.99/# and Crown roasts are $13.99/#.
Boneless Pork Loin:
While it lacks the flavor possibilities of its bone-in counterpart, the boneless pork loin does open up great possibilities for stuffing the middle and is a bit easier to slice. Boneless pork loins are available by weight from 1 to 10 pounds. Their cost per pound is $10.99
Beef Short Ribs:
Slow cooked dishes are a greatway to go for the holiday table. Cooking them a couple days in advance and resting them in their cooking liquid heightens their flavor and reduces stress on the day of your gathering. We can French them for you for a more elegant appearance. Cost for Short Ribs is $9.99/# ($10.49/# Frenched)
Beef Rib-eye Roasts:
We will have these available in limited supply. Place your orders well in advance and we will try to accommodate. Bone-in Rib Roasts are $23.99/#
This is an elegant way to celebrate your holidays. Beef tenderloins are prized for their tenderness and their ease of cooking. One tied beef tenderloin roast weighs roughly 3-5 pounds. Beef Tenderloin Roasts are $29.99/#
We will be getting in some whole lamb from Rainbow Meadow Farms. All cuts will be available in limited supply. Please place your order early to ensure availability. Price varies per cut.
We will have Whole Pasture Raised Duck available from Harmony Ridge Farms in Tobaccoville, NC. They are between 4 and 6 pounds. Cost is $9.50/#
Since we buy whole animals, we have a wide variety of other cuts available that are not on this menu. If you have anything else that you have in mind or a special holiday recipe to fill, please ask!

If you have a special occasion or pastry request please call the shop 72 hours in advance to discuss your pastry needs.
Sandwiches feature all of our own house made ingredients. We smoke/roast/cure everything on the menu below all from local pasture raised meats. All of the produce comes from local farms. The sandwiches come on our house made toasted sourdough bread. They are cut and arranged on platters with pickes.
Cost is $10 per person
(Minimum order is eight people)
We offer one seasonal salad for party platters. Please ask for info on current offering, we can work with you to create something you like.
A good example could be: Roasted Squash Panzanella with fresh herbs and Arugula.
Our charcuterie platters feature our sliced cured meats, pickles, and mustard. Everything on our Charcuterie platters is made in house (with the exception of the chees options). Our options are based on our current availability but we always have at least 10 different items available. We always have at least one pate, a couple smoked sausages, a smoked or roasted ham just to name a few. We are always willing to work with you on what will be on your platter.
Cost is $5 per person
